1 large onion, sliced

3 garlic cloves, minced

1 large cauliflower head (about 2 lbs / 1 kg), cut into florets and stalk roughly chopped

4 cups (960 ml) low sodium vegetable broth

2 cups (480 ml) plant-based milk (such as oat milk)

1 teaspoon thyme (fresh or dried)

Salt and pepper, to taste

¼ – ½ teaspoon ground nutmeg, to taste

2 tablespoons lemon juice, or to taste

Heat olive oil in a large pot over medium heat. Add sliced onions and minced garlic. Sauté for 5-7 minutes until onions are soft and fragrant.

Add cauliflower florets and chopped stalk to the pot. Pour in vegetable broth and bring to a simmer. Cook for about 15 minutes until cauliflower is tender.

Stir in plant-based milk, thyme, salt, pepper, and nutmeg. Cook for another 5 minutes.

Remove the pot from heat and stir in lemon juice. Use an immersion blender to puree the soup until smooth and creamy. Adjust seasoning if needed.

Serve hot, drizzled with olive oil and garnished with fresh herbs if desired.
